INGREDIENTS (for 4-6 people)

1 1/4 l. milk
115 gr. of rice
100 gr. of sugar
2 pieces of lemon rind
2 pieces of orange peel
1 cinnamon stick
1/2 vanilla bean
cinnamon

PREPARATION

Put the milk, the rice, the cinnamon stick and half of the vanilla bean in a pan. Add the lemon rind and the orange peel. Stir the mixture and let it cook over low heat for 40-45 minutes, stirring it every 4-5 minutes to prevent it sticks on the pan. When the rice pudding gets a syrupy texture, add sugar, stir it well and let it on the fire for 5 or 10 more minutes. Remove the cinnamon stick, the vanilla bean, the orange peel and the lemon rind. Finally, leave the result to cool and serve in a bowl or in a glass with cinnamon sprinkled on top.
